There is no doubt the role of hydrogenated margarines, butter replacements, 'spreadable' vegetable oils in our modern epidemics of degenerative disease, such as Alzheimer's and dementia, is greatly underestimated.

Our modern society has blamed natural saturated animal fats in meat, butter and eggs for all sorts of ills, yet they contain very important short chain fatty acids. The hydrogenation process takes place at a very high temperature in the presence of nickel, aluminium and sometimes other heavy metals. Remnants of these metals remain in the hydrogenated oils adding to the general toxic load which our bodies have to work hard to get rid of.

The important point is we should consume natural fats in their natural state without processing them. Eat fats in the form nature provided. The brain and the nervous system are largely made up of fats. Every health problem can be linked to abnormalities in fat consumption.

Every cell in our body depends on Omega-3 and Omega-6 fatty acids. Essential means - we cannot live without them. Our brains are to a degree made up of them.
